Steak Burrito

It is rare that I am impressed with my own cooking. Do I love what I make? Usually, yes. However, I’m not one to toot my own horn and really take a second to bathe in the glory I’ve created. This meal, though, is different. This meal, I ate that shit up (the burrito and the glory). Joe and I got home from NYC with zero idea of what we were making for dinner and I am surprised and grateful, to say that we threw these together with everything we already had on hand thanks to our freezer, pantry, and some random veggies always stocked in the fridge.

Let me just tell you, you need these burritos in your life. Who needs Chipotle anymore when this is possible to make at home!? Don’t wait on these; I promise you won’t be disappointed!

 
 

Steak Burrito

who needs Chipotle anymore!?

Ingredients:

  • NY strip steak (2)
  • Romaine lettuce (1 head)
  • Grape tomatoes (1/2 cup)
  • Avocado (1)
  • Black beans (1 12oz can)
  • Salsa (1 cup)
  • Brown rice (1 cup)
  • Burrito wrap (4)
  • Cayenne pepper (1 teaspoon)
  • Hot sauce
  • Salt
  • Pepper

Instructions:

  1. Cook the 1 cup of brown rice in a pot with 2 cups of water over medium heat, covered, until the water is fully absorbed
  2. Season the steak with salt and pepper, generously, on either side
  3. Cook the steak on the grill on high heat for ~7 minutes on one side and ~5 minutes on the other side, or until cooked to your liking
  4. Set the steak on a cutting board and allow to rest for at least 10 minutes
  5. Rinse and strain the black beans and mix them in the pot with the rice and 1 teaspoon of cayenne pepper, salt, and pepper
  6. Chop the romaine and grape tomatoes into thin pieces and set aside
  7. Slice the avocado and set aside
  8. On the stovetop’s open flame, char the burrito wrap for ~15-20 seconds per side, watching closely
  9. Place the brown rice and black bean combo in the burrito wrap and then top with the sliced steak, chopped romaine and tomatoes, avocado, salsa, and hot sauce
  10. Fold the top edges of the wrap in and then roll the side edges in to form a burrito
  11. Wrap the bottom half with tinfoil, so that it stays together while you eat, and enjoy!
