Chicken Fingers and French Fries

The second I brought home our air fryer to Princeton, I knew exactly what I wanted to make. My favorite fast-food option: chicken fingers and French fries. I knew the fries were going to be a hit because I had obviously made these in the air fryer before (trust me, they do not disappoint), but I wasn’t too sure about the chicken finger aspect of it all. Honestly, I was hoping for the worst but expecting the best. DAMN was I pleasantly surprised!

For the chicken fingers I wanted to make sure they were extra crunchy because, in my opinion, there is nothing worse than soggy chicken tenders. Feel like I’m not alone in that one? While I had originally planned on doing a class egg wash / almond flour coating, I wanted to go the extra mile. I found some crackers in our pantry (Simple Mills ones, obviously) and decided they’d be the perfect addition for not only that extra saltiness but also that delicious crunch.

With the crackers crumbled, I decided to do a double breading. The chicken went in the egg wash, then the almond flour, then back in the egg wash, then in the crumbled crackers. Let’s just say, this experiment was a HUGE success! Once they were both done cooking we ended up dousing ours in hot sauce and ranch dressing alongside ketchup and mustard and holy hell it was one of the best dinners we’ve made in a long time. Chicken Fingers and French Fries

My favorite fast food

Ingredients:

  • Chicken breasts – skinless and boneless (3)
  • Russet potato (2)
  • Eggs (3)
  • Crushed crackers (3 cups)
  • Almond flour (1 ½ cups)
  • Avocado oil (1 tablespoon)
  • Salt (3 teaspoons)
  • Pepper (3 teaspoons)
  • Garlic powder (1 teaspoon)
  • Mustard powder (2 teaspoons)

Instructions:

  1. Cut the potatoes in matchstick sized pieces and toss in a bowl with 1 tablespoon of avocado oil, and 1 teaspoon of each salt, pepper, and garlic powder
  2. Place the fries in the air fryer at 425 degrees for 15 minutes
  3. Cut the chicken breast into thin pieces that mimic chicken tender size and set aside
  4. Whisk three eggs in a bowl and set aside
  5. Place the crumbled crackers on a plate and set aside
  6. Pour 1 ½ cups of almond flour on a plate and combine with 2 teaspoons each of salt, pepper, and mustard powder
  7. With each piece of chicken, place it in the egg wash, then roll in the almond flour mixture, then place back in the egg wash, then coat with the crumbled crackers and place on a plate
  8. Once all of the chicken fingers are coated, place them in the air fryer at 425 degrees for 10 minutes
  9. Serve the chicken fingers along with the French fries and dipping sauces of your choice!
