Turkey Corn Chili

Let me start by saying, I am and always will be a ground beef over ground turkey type of person. Especially when it comes to my chili. However, a few of you have asked for more poultry based recipes so I am trying to help those of you out with a flavorful lunch/dinner option. I want to also note - by no means am I using ground turkey in this recipe for “diet culture purposes”. I hate that for so long diet culture scared people away from ground beef and looking to replace it with ground turkey in every possible way. Now that we’ve made all of that clear, this recipe still slaps. It is loaded with flavor, super easy to make, and the perfect dish to double up on when cooking so you can freeze the leftovers for future meals (you know how much I love my freezer). Turkey Corn Chili

A new spin on my classic beef chili

Ingredients

  • Ground turkey (1lb)
  • Onion (1)
  • Garlic (1 clove)
  • Jalapeño (1)
  • Bell pepper (1)
  • Frozen corn (12oz)
  • Avocado oil (1 tbsp)
  • Crushed tomatoes (1 28oz can)
  • Black beans (1 12oz can)
  • Red kidney beans (1 12oz can)
  • Cayenne pepper (2 tsps)
  • Red pepper flakes (2 tsps)
  • Paprika (1 tsp)
  • Salt (2 tsps)
  • Pepper (2 tsps)
Toppings
  • Shredded cheese
  • Sour cream
  • Bread & butter pickles
  • Avocado

Instructions

  1. Chop the onion, bell pepper, garlic, and jalapeño into small pieces
  2. Strain and rinse the black and red kidney beans and set them aside
  3. In a large pot, add 1 tbsp of avocado oil over medium / high heat
  4. Add in the chopped onion, bell pepper, jalapeño, and garlic and stir for ~7 minutes, or until fragrant and the onion is translucent and slightly charred on the outside
  5. Add the ground turkey to this pot and, using your spoon, break up into small pieces
  6. Season this mixture with the cayenne pepper, red pepper flakes, paprika, salt, and pepper and stir for ~10 minutes, or until the turkey is browned and pretty much cooked through
  7. Add in the frozen corn and stir for a few minutes until it defrosts
  8. Add in the black and red kidney beans and the crushed tomatoes
  9. Mix together and cook on low heat, covered, for ~30 minutes
  10. Remove from the stovetop and allow to sit for at least 10 minutes
  11. Serve in a bowl and top with shredded cheese, sliced avocado, pickles, sour cream, and any other toppings of your choice
