Banana Almond Butter Overnight Oats

At first I was embarrassed to even call this a “recipe”, let alone record a Do That Ish episode featuring it, but then I realized, the people needed this OG staple! These banana almond butter overnight oats have been something I’ve made on a weekly basis for over 4+ years. In fact, they were probably the first thing that got me into the concept of meal prep. With this combination I quickly realized how delicious simple and healthy breakfasts can be and how incredibly easy and helpful making my own breakfast was. They also were the star of my Bay Head breakfast sidewalk sales (serious throwback and a special hug for anyone who even knows what I am talking about!).

This recipe is also the epitome of everything Do That Ish stands for – it is a canvas for you to create in your kitchen and have fun with! While this is providing with you with the specific banana almond butter combination, there is so much more that can be done with this overnight oat base. For example, I even have a few others on my site! Some flavor combinations I love are cinnamon apple butter, blueberry vanilla, cinnamon bun, and strawberry banana.

When I say this recipe is easy, I mean it takes all of 5 minutes and can be done basically in your sleep. I’ve gone so far as to make it when I got home. Drunk from work drinks, which is basically asleep, soooo, I mean it. First step is to mash half of the banana in a jar or bowl, I prefer using a mason jar, and then measure out the other ingredients. The most important thing to remember when it comes to overnight oats is the measurement ratios. Overall, you want a 1:1 ratio for oats and liquid. No matter whether you are doing a combination of oats and or milks, that ratio should always stay consistent. Personally, I love to do half rolled oats and half steel cut oats. The other important measurement is the total serving of oats. Personally, I think ½ cup total of oats is enough for me to have a hearty and filling breakfast. Next up, for the liquids. You can choose to use water, regular milk, a dairy alternative milk, yogurt, or a combination! Store this combination in your fridge for at least 2 hours, preferably overnight, and allow the oats to soak the liquid up. Once it has formed a thicker consistency top with the sliced remaining half banana and enjoy! As mentioned, this is the perfect option for meal prepping and bring along to work with you or eating on the go on your way to school. Truly, there is no time this breakfast isn’t a perfect option.

ingredients:

  • Banana (1)
  • Milk or non-dairy alternative (1/2 cup)
  • Almond butter (1 tablespoon)
  • Chia seeds (1 teaspoon)
  • Rolled oats (1/4 cup)
  • Steel cut oats (1/4 cup)
  • Cinnamon (1 teaspoon)

instructions:

How to cook Banana Almond Butter Overnight Oats

  1. In a jar or bowl, mash ½ of a banana
  2. Add in ¼ cup of rolled oats, ¼ cup of steel cut oats, ½ cup of the milk, 1 teaspoon of chia seeds, 1 teaspoon of cinnamon, and 1 tablespoon of almond butter to that jar
  3. Mix all together and combine well
  4. Store in the fridge and allow to sit for at least 2 hours so that the oats soak up the liquid
  5. Once it has thickened, slice the other ½ of banana and place it on top of the overnight oats
