Hummingbird Cake

You know what is fun? When you combine two of your favorite deserts into one and it creates a perfectly glorious and flavorful holiday cake. Banana bread is always delicious, but when its combined with a fruity and cinnamon flavored carrot cake then topped with a vanilla cream cheese frosting, it is taken to a whole new level. This is a new family favorite for any holiday: Thanksgiving, Christmas, Easter, you name it, I’m making it. And you should too!


Wet Ingredients:

  • Bananas (3)

  • Carrots (4) – shredded and chopped

  • Flax egg (2) – 2 tablespoons of ground flaxseed and 4 tablespoons of water, or replace with 2 eggs

  • Almond milk (1/4 cup)

  • Crushed pineapple (1 20oz can – drained)

  • Coconut oil (1 tablespoon)

  • Vanilla (1 tablespoon)

Dry Ingredients:

  • Oat flour (1 cup)

  • Almond flour (3/4 cup)

  • Cinnamon (1 teaspoon)

  • Allspice (1/2 teaspoon)

  • Nutmeg (1/2 teaspoon)

  • Ginger (1/2 teaspoon)

Additional Ingredients:

  • Raisins (1 cup)

  • Walnuts (1 ½ cups)

  • Cream cheese (1 8oz package)

  • Greek yogurt (1 cup)

  • Vanilla (1 teaspoon)


  • Wash, peel, and chop the carrots into small pieces

  • Drain the can of crushed pineapple so no liquid is remaining

  • Make the flax eggs by combining 2 tablespoons of ground flaxseed and 4 tablespoons of water, stir, then set aside for ~5 minutes

  • In a bowl, mash the 3 bananas

  • In that same bowl, combine all of the wet ingredients

  • In a separate bowl, combine all of the dry ingredients

  • Slowly combine the two bowls into one and fold the batter until it is well mixed

  • Mix the 1 cup of raisins and ½ cup of chopped walnuts into the batter

  • Pour the batter into a cake mold and bake at 375 for ~30 minutes, or until you can pierce the center with a fork and remove without any batter on it

  • While the cake is baking, make the cream cheese frosting by combining 1 cup of greek yogurt, 1 package of cream cheese, and 1 teaspoon of vanilla in a stand mixer until it is smooth

  • When the cake is baked, allow it to cool

  • Once cool, ice the cake with the cream cheese frosting and top with the remaining 1 cup of crushed walnuts
