Blueberry Vanilla Almond Overnight Oats

For some reason I constantly overlook blueberries. They are such an easy fruit to eat and match with different flavor profiles, and whenever they are in my fridge I devour them, but I never actively think to purchase them. When considering different fruit and flavor combinations, I came up with the odd pairing of blueberry, vanilla, and almond. While not one you see often, these three tastes compliment each other extremely well. Enjoy for a “not so normal” version of your everyday overnight oats.

Ingredients (1 serving):

  • Steel cut oats (¼ cup)

  • Rolled oats (¼ cup)

  • Skim milk (¼ cup)

  • Kefir (¼ cup) – vanilla flavored if you want a stronger hints of vanilla

  • Blueberries (1 large handful)

  • Almond butter (spoonful)

  • Diced almonds (1 small handful)

  • Vanilla (splash)

  • Cinnamon

  • Chia seeds (spoonful)

1. Prepare your chia pudding: *this must be done ~5 minutes prior but can be done up to a day beforehand:a. Place a spoonful of chia seeds in a bowl or glass. Pour in enough water to over the seeds and slightly above. Place in the refrigerator and allow the seeds to soak in the moisture of the water and form a gelatinous texture
2. In a bowl, combine the dry ingredients: steel cut oats, rolled oats, and cinnamon
3. Add the skim milk and the kefir to this bowl and stir until well combined
4. Mix in the almond butter and chia seed pudding and spoon the mixture into your container
5. Top with the blueberries and diced almonds
6. Allow the oats to soak overnight and enjoy the next morning or up to 4 days later.
