Apple Pie Parfait

Want to feel like you are eating breakfast out of a Pinterest board even though you have zero idea how to DIY anything? This breakfast will help you achieve that goal. It will also make you feel the emotions every millennial female strives to capture once the leaves begin to change colors: all things fall (without having to go to an apple orchard simply for the Instagram).

Ingredients (serves 2):

  • Apple (1) – I prefer honey crisp

  • Kefir (1 cup)

  • Oats (1/3 cup)

  • Apple sauce (1/3 cup)

  • Milk (2/3 cup)

  • Chia seeds (1 spoonful)

  • Granola (1/2 cup) – I prefer Purely Elizabeth Maple Walnut but if replacing try to find one with the least amount of ingredients and the lowest sugar content

  • Cinnamon (1/2 spoonful)

  • Allspice (1/4 spoonful)

  • Coconut oil

Directions:

1. The night before, or more than 3 hours prior, prepare your kefir chia seed pudding:

  1. Mix 1 cup of kefir with 1 spoonful of chia seeds

  2. Combine well and store in the fridge

  3. Overtime the chia seeds will absorb some of the liquid and form a thicker, more gelatinous substance

2. Cook your oatmeal:

  1. Add 2/3 cup of water and 2/3 cup of milk to a pot, cover, and bring to a boil

  2. Once boiling, add in the 1/3 cup of steel cut oats and a couple dashes of cinnamon

  3. Cover the pot and lower the heat to a simmer. Continue to keep an eye on it as the oatmeal cooks

3. Sautee the coconut cinnamon apples:

  1. Heat a skillet with coconut oil

  2. Add the diced apples, ½ spoonful of cinnamon, and ¼ spoonful of allspice

  3. Mix together and continue to stir until the apples have formed a sticky almost syrupy consistency coating

4. Layer your parfait (from base to top):

  1. Oatmeal

  2. Kefir chia seed pudding

  3. Apple sauce

  4. Sautéed apples

  5. Granola

5. Store in the fridge overnight and eat at work feeling like a DIY badass!
